Not to drop any names, but I'm impressed with my "Cold Steel Pendleton Lite Hunter Black Poly Handle." (I include the full Amazon name just to help you find it.) Cheap at $14, study, and very handy. *Sharp* with a study (Kydex-ish?) sheath. I thought it would make a good hunting knife, and it's earned its spot in my kitchen as a testing knife. It's so sharp, I don't use it as a paring knife for fear of losing a fingertip.
